Strong Ales

In these hectic times, the Christmas period seems to be upon us earlier and earlier. Every year, as the plumes of mirth and good cheer dissipate, I make the pledge, “I will be more organized for next Christmas”. Before I know it, Christmas decorations adorn fake frosted windows, and carols fill the air. Here we go again!! Not even enough time to make that Special Christmas Brew I had planned. Okay…why not use this Christmas to make a Special Brew for next Christmas?A strong ale recipe should do the trick! What is Strong Ale? Generally, an ale combining high alcohol, robust flavours, complex aromas and generous hop levels. Developing complexity with bottle age and consumed in moderation, Strong Ale is not necessarily one style of beer. Porter, India Pale Ale, Imperial Stout, Stock Ale, Barley Wine, Dubbel, Tripel, Trappist and Scotch Ale could be referred to as Strong Ales. Some Australian brewed Strong Ales include the Coopers Extra Strong VintageAle (7.5%ABV). As this is a high gravity brew, the fermenting of Strong Ale is only recommended for the more experienced brewer who can confidently culture a healthy yeast starter and identify Final Gravity (FG) with the use of a Hydrometer.

Strong Ale #1

2 x 1.7kg Thomas Cooper Heritage Lager
500g Sugar/Dextrose
Make up to 23 litres
Use both yeast sachets plus an active yeast culture
OG: 1053 FG: 1008

Strong Ale #2

2 x 1.7kg Thomas Cooper Traditional Draught
300g sugar/dextrose
Make up to 21 litres
Use American Ale liquid yeast (WYEAST or WhiteLabs) or both yeast sachets plus an active yeast culture.
OG: 1051 FG: 1010

Strong Ale #3

1.7kg Thomas Cooper Heritage Lager
1.7kg Thomas Cooper Traditional Draught
1.5kg Coopers Amber Malt Extract
500g Sugar
Make up to 23 litres
Use both yeast sachets plus an active yeast culture
OG: 1070 FG: 1016

Strong Ale #4

1.7kg Brewmaster Pilsener
1.7kg Brewmaster Wheat Beer
500g Honey (your favourite)
30g Coriander Seeds
Zest from 2 small oranges
Make up to 23 litres
Boil crushed Coriander Seeds, Orange Zest and honey with 1 litre of water for 10 minutes. Strain into fermenter.
WYEAST Wheat Beer Yeast or Brewmaster Wheat Beer yeast sachet plus active yeast culture.
OG: 1051 FG: 1008

Notes: Allow a few days for the yeast culture to become active enough for pitching. High gravity brews generally take longer to reach FG. Bottle off when FG has been achieved – two SG readings identical over two days. Suggested FG may vary due to strain and pitching rate.
