'Tis the Season to Start Brewing

Ninety, Eighty, Seventy, Sixty…as we watch the thermometer begin to inch down, we know winter is on its way. We find ourselves trying to keep warm, as well as prepare for the rush of the holiday season. Doesn't it feel like it's five minutes past Labor Day and we're already beginning to race through the holiday season with New Year's being the finish line?

Wait! Stop! Before we all get caught up in the holiday hustle and bustle, we need to remember to brew some beer for our holidays. We know it sounds early but if you start now, your first batch will be ready in time for Thanksgiving. Plus we have some recipes that would be at prime condition for the holidays if brewed now. We continue to add recipes to our Brewer’s Blog. Just in time for the season, we've included a Real Pumpkin Spice Ale recipe and a Holiday Passion Ale. Of course, “pumpkin spice” does sound like a member of an early 90s girl group, but we know that this spice can be just as big a hit during the holiday season.

Holiday Passion Ale
Ingredients:

1 Coopers Heritage Lager Complete Package

1 lb clover honey
2 inch peice of cinnamon stick
1/2 oz dried ginger root
1 oz dried orange peel

Step 1 – Mix
Bring 2 quarts of water to a boil, and then turn off heat. While leaving pot on burner, mix in the cinnamon, ginger root, orange peel and cover pot. Allow to steep for 10 minutes. Turn heat back on, bring to just under a boil. Strain out spices then transfer it to the fermenter. Add Heritage Lager beer kit, Coopers Light Dry Malt Extract, and the honey; ensure syrup is fully dissolved by stirring well. Top up with cold water to the 23 liter mark. Stir vigorously; then pitch the yeast.

Step 2 – Brew
Coopers Heritage Lager yeast can ferment at very high temperatures, as high as 22°C (75°F). Fermenting closer to 18°C (67°F) will give the beer a cleaner flavor and aroma. Allow to ferment 6-7 days until hydrometer readings are unchanging for 2 day
s.
