Dog Days Edition

8/6/2008

IMPROVE YOUR HOME. MAKE BEER IN IT.

"Dog Days" Edition

Unhopped Malt Special

Unhopped Light Malt Extract can be used as a substitute for the additional fermentables suggested to make each of the Coopers beer kits. When substituted it makes a heavier beer with a full malty taste. Through August 31 we are offering our unhopped light malt extract at a price that is $3.00 off the regular price. So now would be a great time to stock up.

We are also going to continue to offer $3 off of each of the Premium Selection Series packages until August 31. This includes the Traditional Draught, the Heritage Lager, the Australian Bitter and the Sparkling Ale.

Cheers,

Premium Selection Series

Very Berry Honey Wheat Beer

When we think Dog Days, our thoughts turn to nice, light, refreshing wheat beers. It is also when our wives and girlfriends start presenting us with containers of ripe fruit, insisting that we make a little beer for them. We have found that our Very Berry Honey Wheat Beer recipe fits the bill nicely. You can use just about any sweet fruit that is in season. The honey in this recipe gives the finished beer a slight effervescence that compliments the fruit flavors.

Ingredients:

Procedures

  • Purée the raspberries and mix into 1 liter of hot water on the stove. This sanitizes the fruit. Allow to cool, the strain into your Coopers fermenter
  • Add 2 liters of hot water to your Coopers fermenter.
  • Mix in Wheat Beer Concentrate Kit, Light Dry Malt Extract, Dextrose and honey. Be sure to get all the ingredients well dissolved.
  • Mix in raspberry purée.
  • Top up fermenter to 21 liters with cold water.
  • Cool to fermentation temperature (below 21°C/73°F) and add yeast.
  • At bottling time add one Coopers Carbonation Drop to each 12 oz/375ml bottle.
  • Condition in bottle 2-4 weeks.
