Another Dip into the Mailbag

Robert F. writes:

Hi. I made the Mexican Cerveza, but I accidentally added 2 liters more water to the brew and I was wondering if it would have a negative effect on the brew. I used the ingredients that came with the package, fermented it for four weeks, and this Saturday makes 2 weeks in the bottle.

No worries. Adding the additional 2 liters will make your beer a bit lighter in color, flavor and alcohol, but it will still be a perfectly drinkable beer. You might find its just the thing for these warm summer days.  2 liters is about 8% more volume, so you will find that your original gravity, as measured with your hydrometer, will measure about 8% lower than you might expect, in the range of 1.033-1.035.  You will also need to have 3 or 4 more bottles handy at bottling time.
