Add a slice of lime and think "Cabo"

We'll admit it...we love Baja. The whole beach, warm weather, sand-in-toes, no hurricanes, Sammy Hagar thing. We're not completely sold on the lime beer thing that Bud and Miller are doing...but there is a place for a nice, light, cold one with a chunk of fruit in it. And that place is Baja. Maybe we are splitting hairs....well since at least one of us is bald, probably not.

Here is a salsa recipe that we think works very well with our Mexican Cerveza beer. It's not particularly hot, but it is tasty. Put some on a tortilla chip and wash it down with a Coopers Cerveza that has a hunk of lime in it. Now there's a food-beverage match made in heaven...or Baja.

Mango Salsa
2 mangoes, diced
2–3 cups diced tomatoes (use a combination of red, yellow and orange tomatoes)
4 cloves garlic, minced
1 Jalapeño chile, minced (remove ribs and seeds for a milder salsa)
1 medium red onion, finely chopped
6 green onions, finely chopped
3 Tbsp fresh cilantro leaves, chopped
3 Tbsp fresh lime juice
Salt and pepper to taste
Mix and refrigerate at least one hour before serving with your favorite tortilla chips.
